Kenya is well known for its highly organized network of coffee cooperatives. This system produces remarkable consistency in growing methods, milling, and auctioning across a web of about 150,000 growers, the majority of which are small-scale farmers. The topography of  high-altitude plaeaus in major Kenyan Coffee regions combined with acidic soil provides excellent growing conditions for Arabica.

All Kenyan coffee is graded primarily by screen size (a measure of the size of the bean, larger being higher grade) immediately after milling; it then proceeds to the weekly auction at the Nairobi Coffee Exchange. The AA grade is the top grade based on screening. After grading, there are two general quality distinctions for AA

Top Quality of Plus

Only a minimal amount of slight defects allowed as long as no effect on the cup. Typically grown at 4500-6000 ft above sea level, of SL-34 variety. Very high-quality Coffees often derive from small co-ops and may be auctioned as separate lots.

Fair to Average Quality “FAQ”

Occasional minor defects (insect damage, pulper) as long as no effect on the cup. Typically 3500-4500 ft above sea level, of SL-28 variety. FAQ consists mostly of coffee from the large estates.

Cupping Notes

  • Flowerly, Citric, Passion Fruit, Berry, Dried fruit, Spicy complex flavor, Very clean acidity and sweetness.

Testy Science

Very high maturity. Smooth mouthfeel with caramel sweetness.

How to brew

Brewing ratio for 1 cup
•Use roasted whole bean for about 10 g. (1 full table spoon) and grind the coffee bean.
•After grinding the coffee, put them into a container with filter such as French press, Drip filter or Espresso machine.
•Boil hot water at 95 degree and pour into the ground coffee with about 120-150 cc.
•Each brewing equipment takes up to 4 minute to brew the good coffee.

Tasting Notes

Diagram Means Aftertaste
Aroma – The way of coffee smells could possibly be nutty, fruity, chocolaty or others. These aromas would be related to the coffee’s flavor.
Acidity – It is not only the sour but also the bright taste could feel about the cup of coffee. Acidity also means a range of flavor; citrus, cherries or berries which you can taste from your cup.
Bitterness – Another factor of bitter characteristic could be from the level of roasting. In addition, the roaster wants to present the strong taste, the longer time and high temperature techniques are applied with the roast levels.
Body – In term of body, it expresses the richness or heaviness when the coffee is touched the tongue.
Aftertaste – Aftertaste is about finishing a cup and still remains some aroma or flavors in your mouth. The range of aftertaste may feel balance and smooth, which it depends on the bean’s source and the roasting level.
